How to Make Italian Rice Salad
1. Cook the rice

Drain the grilled mackerel, reserving a little of its flavorful olive oil if you would like to use it as part of the dressing.
Gently separate the fillets into bite-sized pieces.
5. Assemble the rice salad
Place the completely cooled rice in a large bowl.
Add the cherry tomatoes, cucumber, green olives, black olives, and pieces of grilled mackerel.
Mix everything gently so the mackerel does not break apart too much.
6. Season the salad
Drizzle the salad with extra-virgin olive oil and add freshly ground black pepper.
Taste the completed salad before adding salt. The olives and mackerel may already provide enough seasoning.
7. Chill and serve
Cover the bowl and refrigerate the Italian rice salad for at least 30 minutes. This gives the ingredients time to cool and allows the flavors to come together.
Serve it cold or at cool room temperature.
