Today, I’m sharing one of my absolute favorites: Lemon Linguine.
Light, fragrant, and bursting with citrusy goodness, it’s a dish that feels like summer in every bite.
Ingredients (Serves 2)
• 200 g (7 oz) linguine pasta
• Zest of 2 organic lemons (freshly grated for maximum flavor)
• Juice of 1 lemon
• 3 tbsp unsalted butter
• 3 tbsp extra virgin olive oil
• 50 g (½ cup) freshly grated Parmesan cheese
• Salt and freshly ground black pepper, to taste
• Fresh basil or parsley, for garnish

Instructions
1. Cook the pasta in a large pot of salted boiling water until al dente. Reserve ½ cup of pasta water before draining.

3. In a pan, melt the butter with the olive oil over low heat. Add the lemon zest and stir gently to release the oils.
4. Add the cooked pasta to the pan, along with a splash of the reserved pasta water. Toss to coat.
5. Finish with lemon juice and Parmesan cheese, tossing until creamy and silky. Adjust seasoning with salt and pepper.
6. Serve immediately, garnished with fresh basil or parsley – and maybe a glass of chilled white wine.
