🌿 Rosemary Bread: A Little Taste of Italy at Home

There’s something magical about the smell of freshly baked bread. Add rosemary to the dough, and suddenly you’re not just baking — you’re walking through an Italian herb garden kissed by the sun.

This rustic rosemary bread is inspired by my Sundays in the kitchen, where I mix flour “a occhio” (by eye) and let the magic of yeast and time do the rest.

✨ Ingredients (approximate, adjust to your liking)

• 500 g flour (a mix of tipo 0, 00, and semola rimacinata – or just bread flour if that’s what you have) I love Caputo flour, thanks, Mr Caputo, to bring Italy back to me !!!

• 2 tsp salt

• 1 tsp dry yeast (Caputo if you can find it)

• 1 tbsp olive oil (extra virgin)

• 300 ml warm water (approx, add slowly until dough is soft)

• Fresh rosemary, chopped

🍞 Method

1. In a large bowl, combine flour, salt, and yeast.

2. Add warm water little by little until you get a soft dough. Add the olive oil and rosemary.

3. Knead until smooth (about 8–10 minutes) or use a stand mixer with a dough hook.

4. Cover and let it rise until doubled in size (1–2 hours).

5. Shape the dough into a round loaf, place it on a baking sheet (or in a Dutch oven), sprinkle with rosemary and sea salt.

6. Bake at 220°C / 430°F for 25–30 minutes until golden, with a crust that sings when you tap it.

Slice warm, drizzle with good olive oil, and imagine yourself on a terrace in Positano. Pair with wine, cheese, or just enjoy it plain — because good bread doesn’t need company.
